Baked Scallops

This dish allows for three scallops per person. Ask your fishmonger to sell you them with their shells, but ask him to remove and beard them for you. Use homemade breadcrumbs rather than the bright orange shop-bought ones.

Ingredients:

1 dozen scallops

2 oz (50g) butter

Breadcrumbs

Lemon juice

Parsley

Directions:

Preheat your oven to 350-375°F / 180°c/ Gas 4-5

Grease an oven proof dish, and then coat the bottom of it with breadcrumbs to about a ¼ inch thick.

Now place the scallops on top, season over their surface, and add a good squeeze of lemon juice

Now coat with another layer of breadcrumbs, but not as thick this time.

Chop the butter finely, and dot it all over the top of the dish.

Bake for between 20 – 25 minutes.

Return to their shells, and garnish with fresh chopped parsley
